Tofu Cabbage Salad
* 1 tablespoon sweet chili sauce
* 1/2 teaspoon grated fresh ginger root
* 2 cloves garlic, crushed
* 1 tablespoon dark soy sauce
* 1 tablespoon sesame oil
* 1/2 (16 ounce) package extra-firm tofu, diced
* 1 cup snow peas, trimmed
* 2 small carrots, grated
* 1 cup finely shredded red cabbage
* 2 tablespoons chopped peanuts
Directions
1. In a large bowl, mix the chili sauce, ginger, garlic, soy sauce, and sesame oil. Place tofu in the mixture, and marinate 1 hour in the refrigerator.
2. Bring a pot of water to a boil. Immerse the snow peas in the boiling water for 1 to 2 minutes, then immerse in a a bowl of cold water. Drain, and set aside.
3. Toss the peas, carrots, cabbage, and peanuts with the tofu and marinade to serve.

This was amazing. Just amazing. I didn't think I could ever really get excited about a salad, but now I know better. And boy do I ever get excited thinking about this salad.
ReplyDeleteHonestly, I feel a little weird discussing my emotions (yes, I now I have salad emotions) about this in such a public forum. Suffice it to say, this salad will change you, and your perception of reality.
This salad looks a little scary to me. I'm very picky about my tofu...

Yes, there's no doubt how John feels about your salad. :) I guess I'm just not adventurous enough.
ReplyDeleteI live vicariously through my tofu experiences. In fact! If it weren't for tofu, I doubt that I could have ever blossomed into the man I am today. Without this cabbage tofu salad, and the impact it had on my life, I wouldn't be here, now, talking about this tofu cabbage salad with you, my fellow commentators.
